How much oil does it hold?

22 oz, about 650 ml, which is a full supermarket bottle decanted. That is roughly two weeks of everyday cooking for most households.

Why ceramic instead of glass?

Light speeds up the oxidation that turns olive oil rancid. Opaque ceramic blocks all of it, which is why traditional Mediterranean oil vessels are earthenware. It also looks like it belongs on the counter rather than in a cupboard.

Can I refill it without a funnel?

Yes. The mouth is wide enough to pour straight from a bottle or tin. Empty it and rinse before each refill rather than topping up, so older oil does not flavour the new.

Does the spout drip?

The spout is tapered so oil pours in a thin, steady stream and stops when you tilt back. A cork stopper is included for when the spout is not in use.

Can I use it for vinegar?

Yes, but keep a separate dispenser for it. Vinegar leaves a trace that carries into oil.

How do I clean it?

How many cabbages fit in the 3-litre crock?

Two to three medium heads of shredded cabbage, which makes roughly five quart mason jars of sauerkraut. If you regularly ferment more than that, the 7-litre crock takes five to seven heads.

Do I need an airlock or a clamp?

No. A channel around the rim holds a ring of water. Carbon dioxide from the ferment bubbles out through the water and air cannot get back in. Check the channel every few days and top it up; in a normal kitchen it needs water every 5–10 days.

Is the inside of the crock glazed?

Yes. The interior is fully glazed in white, so it is non-porous. Kimchi, sauerkraut and pickles wash out completely and the crock does not carry flavours from one batch into the next.

What is included with the crock?

The crock, its domed lid, two half-moon ceramic weights that hold the vegetables under the brine, and a wooden tamper for packing the cabbage down.

Should I buy the 3-litre or the 7-litre crock?

The 3-litre suits a household that ferments a couple of cabbages at a time and eats the batch within a month or two. The 7-litre is for bigger batches, five to seven cabbages, or for keeping several ferments going. Both use the same water seal and the same weights.

Can it go in the dishwasher?

Wash it by hand with warm soapy water and let it dry before storing. Like all ceramic, keep it away from sudden temperature changes.

How many cabbages fit in the 7-litre crock?

Five to seven medium heads of shredded cabbage, or whole quartered cabbages for kimchi. That comes out at roughly twelve quart jars of finished sauerkraut.

Do I need an airlock or a clamp?

What shape of loaf does it make?

A full-size rectangular sandwich loaf, the shape that fits a toaster and a lunchbox. It takes up to 2 lb of dough in a 10 by 5 inch interior.

Is it enameled?

Yes. The finish is enamel over cast iron, so it needs no seasoning and releases the loaf cleanly. Let it cool before washing.

How does the lid help?

Home ovens have no steam. With the lid on for the first part of the bake, the moisture leaving the dough stays around the loaf so the crust sets evenly. Take the lid off for the last stretch to brown it.

Can I bake sandwich bread without sourdough?

Do I need to season it?

No. The enamel coating is glass fused to the iron, so there is no seasoning ritual and no rust to watch for. Let it cool before washing and avoid metal utensils on the enamel.

What size loaf does it bake?

A batard of up to 2 lb of dough, about a 900 g loaf. The interior is 10 by 6.5 inches.

How do I bake sourdough in it?

Preheat the oven with the cloche inside, lid on, at 450–480°F for at least 30 minutes. Turn the loaf onto parchment, score it, lower it in, and bake 20 minutes with the lid on and 20–25 minutes with the lid off at about 430°F.

Why does the lid matter?

A home oven cannot make steam. The domed lid traps the moisture leaving the dough for the first part of the bake, which keeps the crust flexible while the loaf rises and gives you a crust that crackles instead of one that softens.

What is the highest temperature it can take?

500°F (260°C).

Is it the same as a Dutch oven?

It is a lidded enameled cast iron vessel like a Dutch oven, but shallower and shaped for a batard rather than a round boule. It roasts and does casseroles just as well.

Are they dishwasher and microwave safe?

What sizes are the two crocks?

The large crock is 8 inches tall and 6 inches wide, for spatulas, whisks, tongs and ladles. The small one is 6 inches tall and 4 inches wide, for peelers, spoons, brushes and thermometers.

Why two crocks instead of one?

Long-handled and short-handled tools do not live well together. In a single tall crock the short ones sink and you end up digging. Splitting them means every handle is visible and reachable.

What does the scalloped rim do?

It drops the wall in four places so handles lean outward and separate instead of bunching in the middle.

Will it tip over?

The crocks are heavy ceramic with a wide, stable base. Pulling a spoon out one-handed does not move them.
