No. A channel around the rim holds a ring of water. Gas escapes through it as the ferment works and air cannot get back in. Top the channel up every few days; in a normal kitchen it needs water every 5–10 days.

Wide water-lock rim
A channel of water around the mouth seals the crock without a clamp or an airlock. Carbon dioxide escapes as the ferment works; air never gets back in. Extra-wide, so it needs topping up far less often.

I love(d) this fermentation crock, it’s lightweight, the design is great for fermenting and it looks nice. I used it for sour pickles, that turned out awesome, then for sauerkraut with purple cabbages, that came out great also.The problem lies in the undetected flaw at the bottom of the crock. I wouldn’t have noticed it until I fermented purple cabbage, and the crack is stained. This wasn’t a cheap purchase and I’m disappointed in the quality. It’s past the 30 day return timeframe, Amazon was no help, I have written to TOMO, hoping for a replacement, or at least to find out if it’s safe to use with a porous surface defect that can harbor bacteria. Waiting for their response….Update 11/10/2025. : TOMO reached out to me and credited my purchase. I do think their product is a great design and easy to use, and comes with everything you need to make some great ferments. I just happened to get one with a flaw. They are hand made, and that can happen, also happens with machine made. Thanks TOMO for your customer care.

Very nice crock! It holds A LOT of cabbage!

Arrived heavily styrofoamed. But even without, I don’t see this thing easily breaking unless you make an effort. Weighted, solid, gorgeous and I just harvested my Gardyn and took all my cabbages, kale, kale lucinato, mustard greens, spinach and tatsoi; put in some juniper berries and peppercorns and coarse gris salt- then added dill and cilantro. It smellls amazing. I’m so impressed with the glazed weights because now I don’t have to be inventive with past failed attempts at keeping the veggies below the brine. I thought a 3L to make pine wine, something I had from the Black Forest of Germany. The 3L is equally incredible. Spend your money on this and trust the purchase. Then, enjoy your food!

Bought for hubby and he is thoroughly enjoying it. He just made his first batch of wine and is finishing off the clarifying steps in jars.This crock holds so much and has a nice wide mouth for filling. It came in flawless and has more than lived up to expectation. For the quality and size, the price really wasn't that bad.

A modern take on classic. It will be useful in the summer - right now I am doing small batches in the mason jars as it is the two of us and you can get a better idea of size.

Perfect size for the do it yourselfer sauerkraut maker. Currently fermenting 15 pounds of cabbage. The weights and the water while are perfect additions to the product. It is also A sharp addition to any country kitchen.

A week into ferment,

That cabbage from our garden weighed 6 pounds and by the time it was cut up, salted and packed into the crock, it was just half full. So, in about 6 weeks, we will pack about 6 quarts, water bath 4 of them for stuffed cabbage and keep the other two jars in the fridge for some awesome probiotics. Also, I love having such a lovely crock sitting on my counter.

Not bad - first batch on Pickles going now - the opening is tad small ( hard to put the weight stones )but works - sadly 3L fits only 8 large Cucumbers - i think gonna get the larger one too
This works perfectly. It takes up little space and it is very efficient in fermenting pickles and peppers. All done fresh with no vinegar or other additives and they are the best I’ve ever ate. When I get done either ransom and vacuum seal them, put them in the fridge or just fill a jar and put that in the fridge with the existing brain.. just like my grandmother taught me when I was a little boy! This method saves all the food value that heat removes in canning. 5 to 7 day process or longer if you want more sour flavor..
Over the years, I have tried many styles and methods of fermenting. The WATERLOCK SEAL works best. It keeps light and oxygen out so you can ferment without mold forming provided you keep about 2 inces of liquid over the top of the cukes, cabbage, or kimchi. However, the problem with many of the WATERLOCK SEAL crocks is they are too big and heavy making the job difficult, especially when cleaning them after fermentation is done. It strains your back and arms making you want to throw it out instead of clean it. These TOMO crocks solve that problem. They are solidly built but very light weight making them easy to use and clean. I absolutely love these and have gotten rid of all my other crocks. I bought both sizes for smakll and larger batches depending on what I am fermenting. These are a real joy to use. I could not be happier.

I didn't manage to make good sauerkraut, so I gave it to a friend and he regularly use it and he says it is fantastic. From time to time he gives me sauerkraut he makes and it is very good. The secret - waits at least 5 weeks. Apparently, I didn't wait long enough.
It's big. I shredded 5 cabbages to fill this.The weights are useful. I put a layer of whole leaves between the shreds and the weights, to minimize "floaters".The water seal works well. Don't overfill it, or it will spill into the interior when you put the lid on.Very safe packaging for shipping.Happy with this purchase.I'll try fermented cucumber pickles next

We’ve been making kimchi in jars for years, until we found these crocks, they hold 3 to 4 Napa cabbages easily, insert weights atop ingredients, seal with water moat lid and one week later, perfectly fermented kimchi.
Have just decanted my first batch of kraut after 5 weeks of pickling. Impressive looking pickling crock and the resultant kraut is wonderful.

I absolutely love this crock. It is super easy to clean, it makes incredible ferments, and the ceramic half plates for weights are ingenious. I love the lip on the lid which can hold some salt water and keep it air locked. I do not think I could be more pleased with this little crock.

I have made to batches of sauerkraut in the crock. It holds a lot of cabbage and I can fill it up and let it do it's magic. I love the taste of making my own. It works and does the job well. It seems to be good quality crock and I would buy it again.
This is a BIG unit that will swallow up those cabbages. We went with this unit because the weights are glazed. I am a SourKraut novice, but the thought of using un-glazed porous weights seems wrong (maybe the accumulated bacteria results in tastier product over time?).Our unit arrived boxed with conformal polystyrene and so breakage was not an issue. It was robustly packaged.As I washed it in our kitchen sink, I kept saying to myself "Careful .... Careful .... DO NOT bang it against the sink ...". As a few others have said the unit feels "thin" and it seems like a careless bump on the side of the sink might crack it. Time will tell.The weights are HEAVY and we really like this.

This crock is wonderful. It is very thick and nicely finished/coated. The water trough is substantial and the opening is plenty wide enough to get your hand and stamper in. Don't use the weird stick they send with it, get a small potato masher instead.I filled it with cabbage, I think six in total went in this bad boy and the sauerkraut was delicious, wonderfully crisp and fresh. It did require water in the top every day or two.
very well made. Fits easily under the overhead kitchen cabinets and blends in with the other black appliances. I really like the 3liter size for fermenting hot sauce in medium sized batches. At the moment I’ve got pickles fermenting. I do wish the inside water lip was taller, but haven’t had any evidence yet of water back flowing into the ferment.
Perfect size crock for making small batches of sauerkraut
I got this after I returned another brand that was only a little bit cheaper than this one. Both had good reviews and some negatives. I'm going to try to address some of the things that I read in reviews for this item.I returned the other one after only unpacking the lid. The lid was thinner than I would have expected, but the main problem was that it was badly warped. I didn't even want to see the rest of it so I returned it.I saw one review for that item which mentioned this crock. I wasn't sure if that was a legitimate review, or not, but I'm glad I tried this one.It isn't as thick as traditional American pickling crocks, but it is substantial. I would say it's close to the ideal thickness for a *relatively* small item (traditional American pickling crocks are pretty thick).I bought the 7 l size because people have a tendency to try to overfill things like this if they go too small.I will probably not have more than about 5-6 l of material fermenting at a time, so the problem of getting the weights in and out that some have described shouldn't be an issue. I've done a dry run, and it should just be a matter of leaving sufficient room at the top. If you're using a vessel that's too small, you can't have that luxury.This takes up roughly the same amount of counter space as a gallon jar or jug. It's substantial, but not huge.The first item I ordered had small handles. This one has no handles, but I like it better because of the way it's designed. If you look at the pictures, this design has a taper about 3/4 of the way up from the bottom. I like the way my hands wrap around the point where that taper is. I don't have any problem lifting it, and don't think when it's full it will weigh enough to be a problem.The little handles on the other one, in retrospect, wouldn't have given me much area to grip.That taper, whether it was intended to be for this or not, also looks like it will help me to measure a level I can fill it to and still have room to easily get the weights in and out. With a 7 L crock I can make a good-sized batch of kimchi or sauerkraut for the family without having to pack it all the way to the top.Another concern I have seen about this crock involves cleaning it. It does have a lip that I can see making it different to clean then some other large jars, but not much harder. I happened to already have an inexpensive set of kitchen brushes, including one that is angled in a way that it should reach up under that lip just the way I want. I will certainly want to wash and rinse this carefully, but also to dry it out with a towel. I can't foresee any concerns about getting it clean.
Works great tastes even better, nothing beats sauer kraut made fresh.
I made some EXCELLENT lacto fermented pickles in this crock from cucumbers from my garden. They are so good, they have that fermented sizzle to it. So healthy and just a lovely and pretty crock. And the amount of pickles I was able to make was fantastic - the crock is spacious!!

It was better than l expected. I was looking for a ceramic jar for fermenting rice wine. After endless searching, l came across this container. It is very esthetic as well as functional. It is very sturdy as well as a great quality. I would definitely recommend it for fermenting needs. I love the weights inside as well as the wooden wand. It is very cute on my kitchen counter. It holds much more than l expected. Overall, l am very satosfied.
Arrived very securely packaged and was just as advertised. The stoneware crock is very lovely, the ceramic weights are substantial, and the wooden tamping tool was not flimsy. Can’t wait to try it out! Nothing better than homemade kimchi! Will try other things as well now that we have a proper fermentation crock.

I received my crock last week and immediately prepared my first attempt at fermenting sauerkraut. It has been 10 days and I am ready for my first taste. The crock made it so easy to prepare and monitor the fermentation. I look forward to trying more recipes.

Received my Tomo fermentation crock today. First impressions include one positive but two negative reactions. First, I love that it has a wider mouth. My other crock of the same size has a smaller mouth that makes it difficult to get the weights in to hold things below the brine. Now the negatives. The crock itself is made of a rather thin ceramic. Honestly, it feels as if one bad bump or slip and it will break. Not true of my other crocks. Also, it is going to be difficult to handle once filled as it has no handles or other means to securely grip it as my other crock of the same size does. We will see how many seasons it lasts due to these two interrelated concerns.
as you can tell from the order date and the delivery date, i have only had my tomo for about two weeks, BUT i will say that the crock is very user-friendly and we talk every day. my first batch of sauerkraut is still "cooking" and will probably not be ready until about 31 may, though i have been tempted to test the product before my three weeks is officially up. the contents almost smell like 'kraut so i think that we are on the right path. if you want to get back to me in a week or so, i should have more relevant news --daniel
I make sour kraut and it's delicious. Love the look and quality of the pot. Water seal on top is good.
Had two of these for several seasons now. Works great for making sauerkraut etc. The subtraction of one star is based on the rim which is curved and hollow inside, making it really hard to clean and sterilize. Otherwise it's a great crock.
I ordered a second Tomo crock because I had so much success with the first one! Am onto my third batch of sauerkraut with the first one and a new batch of pepper mash for hot sauce with the second one. No issues with mold. The water lock is fabulous - very satisfying to hear little burps every once in awhile. Just keep an eye on the rim to keep it filled so no air gets in. The ceramic itself is of high quality and looks great on my counter as we wait to see what treasures ferment inside!
I love my little crock even if my first try at kraut was a failure. I plan to try again.
I moved into a new home and discovered I was the proud owner of an olive tree. I decide to cure them and after a little study I decided to purchase 2 of these. They worked perfectly and were actually attractive in my new kitchen. I would highly endorse purchasing these.

This is my second purchase of this item - need one say more? This will allow me to make use of my Chinese Cabbages by fermenting different kimchi recipes at the same time. After multiple batches of kimchi with the original pot, it was time to up the game.

We own a number of fermentation crocks. This one is the perfect size for making small batches of kimchi, sauerkraut and crock pickles (the glass weights work well to keep the cucumbers below the surface of the brine). The water seal lip around the lid is at a good height and doesn't have to be filled as often as some is the other one s we have.
I’m happy to share my experience! I bought my first Tomo 7-liter crock in January, and made my first batch of homemade sauerkraut. It was delicious and amazingly easy. Then I started wondering about moving on to kosher dills and other fermented foods. The crock was so well made and frankly, so beautiful on the counter, that I decided to order a second one so I could do two products at the same time. The pickles will be ready next week and the next batch of sauerkraut the week after that. I couldn’t be happier with the quality and great looks of these crocks!
Love, love, love this fermentation pot! My husband had been stationed in Korea and was getting nostalgic for kimchi. I said I could learn to make it and bought this pot straightaway after researching different types and sizes of fermentation vessels. This one is attractive and thoughtfully designed. The weights are great for keeping cabbage submerged and the lid design allows the pot to “burp” but does not let air in when water is added inside the rim. Now my husband enjoys the sauerkraut I make him even more than the kimchi!

Well made with solid ceramic coverage. No rough areas. Weights coated well too. Pretty on my counter top. Did my first taste test of kraut and it is coming along well. I would buy this again and have told my daughter this is the one to purchase.I have now purchased three of these crocks. Too large and one small. They are all filled with different sauerkraut as I write this review. Obviously I would encourage new buyers to consider this product.
Just received this late yesterday. Haven't used yet, obviously, but reviews indicate very good results. Writing about the wooden tamper, really. It's a straight wooden dowel, about 1 inch in diameter and 11 inches in length. That is a pretty small surface area with which to compact your kraut or whatever you might be pickling. If you don't have another tamper already (I do), you might consider purchasing one with flared ends.
This is a beautiful crock! I had to return mine because I decided it was too small for my needs, but I wished they would make a 10 liter one! Maybe, in the future they will. If you’re looking for a 1 gallon crock, this is a real beauty!

It's easy to use and easy to look at. It's not too big or out of place on the counter top. I've also used it to brine fish for smoking.

I love this kimchi pot. It is the 7 liter wich is a lot bigger then i thought abd it's amazing. Made beautifully our of ceramic and looks modern . It fits perfectly into he corner of my kitchen counter. It has kimchi in it at the moment. I made it 2 days ago and can already smell the fermentation. I can only smell.it when i get really close to it. That is a big plus. My kitchen doesn't smell like kimchi. I hope it stay that way for the next 3 weeks. I am very happy with this product. Will proby one more.

I'm making sourkraut, and I was able to get four large heads of cabbage in the large size fermenting pot. And I really like the lid with the burp holes for the gasses to be expelled, with the water mote it really keeps any fruit flies out!

Sometimes when I walk by this beautiful, well-made fermenter, I hear a little blip as carbon dioxide is released from the Kirby cucumber dill pickles I made 7 lbs in mason jars and 7lbs in the fermenter with identical recipes. The jar pickles were more acid- tangy less flavorful, and not evenly pickled throughout while the fermenter pickles were evenly pickled and much tastier. So I assume other things I ferment in the future will be improved from the jar method. Great looks, works great and fair price!
Started a simple slaw ten days ago and opened the lid today; expecting the worse but hoping for the best.The result was perfectly fine.Yes, the water trough creates a recess on the inside which makes pouring out the liquid from the crock after removing the bulk of slaw with tongs somewhat difficult. And cleaning that recess requires attention. But that is fine and I am happy to be able to deal with it because the overall design is beautiful and, in my case, works flawlessly.The weights are glazed and therefor easy to clean.
I made my 1st batch of red cabbage saurkraut a couple weeks ago. It came out perfect & delicious. I Used 2 tablespons of pink salt for 1 head of organic cabbage and left it fermenting in the crock for 7 days. It was perfect for my taste.
First, what's not perfect: It's true, as other reviews have said, that there is a lip beneath the water seal section, that traps water. Measuring this, it's only 1 tablespoon--easy enough to wipe out. The crevice there is narrow (see video) and conceivably, someone could carelessly leave some vegetable shreds there that could cause problems, BUT it's not hard to run a brush around that rim--problem solved. It's on the thin side and therefore more likely to break if dropped than an old-fashioned stoneware crock an inch thick, but the flip side is that it's much less heavy or likely to break a toe if it does get dropped. Lastly, the tamper is simply a length of 1" dowel, so harder to grip than something with a more comfortable handle. Still, it's nicely finished and smooth, and this way, there's no upside down. :)The great things: the color is a deep near-black, satin but not high gloss, so it's attractive. The handle is easy to grasp and unlikely to slip. It's HUGE, big enough for a couple of heads of cabbage or a bunch of pickles. It sits flat without rocking, and the finish is perfect--no pockmarks or chips, and the lid fits beautifully. Came very well packaged. The weights are glazed, which I like, and easy to slip in and out, but still a bit bigger than the opening, so they don't fall out by accident. It's well made enough that I'm tempted to get the smaller size to use as a jar for dog biscuits.

We use these for brewing makgeolli and they work great and are easy to clean. I bought me and after the first use bought another. Makgeolli is cooked rice with water, yeast and enzymes that make a delicious fermented drink and it is fun to come in the kitchen and hear the fermented gas bubble through the water seal. A bonus is that they look good sitting on the counter.
I bought this as a gift for someone that enjoys cooking. So far - pickles, kimchee and sauerkraut - all yum.

Excellent product -easy to use and clean.
The biggest issue is the inside neck being a water trap. The inside lip of the water-stop isn’t flush with the inside of the crock. It makes it difficult to wash or rinse the crock and get all of the fluid out without it getting caught in the inside lip. You have to use a towel to dry this stuck water out. This makes it difficult to sterilize.The fermentation weights are right fit through this 3.5”diameter opening. If you fill the crock more than half way, the weights become impossible to use.The fermentation moat does not hold enough water, and requires constant monitoring not to dry out. The inner wall of the moat is 3/4”and lower than the outer wall which makes it easy to have moat water contaminate your fermentation.
Looks well built. Will use it to ferment cabbage and other vegetables.
Idk. Feels like it’s gonna break easy. The water seal didn’t seem to last two weeks. I forgot about it after a few days and it had opened up and got gross. For the price you could buy a 5 gallon glass fermenter it’s see-through it seems like it’s cleaner and stronger.
Pot is chipped outside and someone painted brown, I am out of town so have no way of exchanging
It's nice jar, the only thing is I was not aware that it comes with a nice pounder.I bought three of these, the first two I just through the box away without noticing the pounder was inside.I found the pounder this time. It's not in the main picture or title. I hope the seller can fix this.
Received the crock in decent condition, box was banged up and the interior foam busted but the crock was OK - I know this is shipping and not the seller.We washed the crock and looked it over, not bad. Our main ding with it is that the interior white glazing has a lot of spattering from the brown glazing so when you look at it it looks like there's dirt all over the inside. There's not. Not a show stopper but annoying.No instructions or any paperwork at all. You get the crock and weights and that's it. We have a fermenting cookbook on the way.We're pretty sure it'll work and I may update this after we have a successful run. But for now, the finish and lack of any care instructions could have been done better.
A good looking pot to have on the counter for three weeks while your cabbage is saurkrauting, which came out just fine. However, the space at the top of the crock has an odd lip that can catch some of the cabbage when you pounding and will keep it out of the brine which could allow some mold to grow. It also makes it hard to pour the brine out of the crock. It also makes it a bit difficult to clean compared to some other designs.
Good size and well made crock. The only thing you need to watch out for is if you are trying to ferment something small (in my case Tabasco and cayenne peppers) the weights tend to slip off and down to the bottom. I mitigated this by putting the weights in a gallon zip-lock freezer bag and leaving air in it. I then placed it on top of the peppers to hold everything down.
These crocks are beautiful, but more delicate that American made stone crocks.1st one came with a broken lid.2nd one has the extrusion nub on the bottom down below the floor rim, so it wobbles. I'm being charged for the replacement, so I will make 1 good crock and send back the defective parts.All in all it is a nice product, but delicate.
I commend the company for making a beautiful product. My recommendation if you are willing to live without the airlock (which I kinda feel is not a big focus point because you are going to have everything under your brine, and if there is something that made it above the brine I think I’d want to know about it and rectify rather than not being able to see it because I have to keep it air locked for 3-6 weeks) So today after packing my cabbage in I realized when I got 3/4 full, to put the weights in I had to push down each tip about half way down through the packed cabbage to be able to get the stone through the top. The reason I would prefer not to do this is because my top layer is two large cabbage leaves holding down the shredded cabbage, so having to shove the corner of the weight way down makes the possibility of shifting around the top leaves and letting floaters through. I can get good at anything so I’ll develop ways to do it better (maybe using 2 layers of top leaves) but I think in future purchases I will order a crock with no narrowing lip, just an open top so I can put the weight straight down. I just searched and the product I found was Ohio Stoneware. You purchase the weights separate from the crock, and a lid too if desired. To create an airlock of sorts I will get a heavy duty piece of plastic (maybe a 2-3 gallon ziplock) that will fit over the mouth and rubber band it shut. Then put micro holes with a needle for the CO2 to escape. Then I would wash and reuse it.Only other thing I would have preferred is a wood packed with a larger surface area. It probably will work just as well, but my newbie mind thinks maybe the company could upgrade that in the future.Happy Fermenting no matter what you use and I still say this TOMO crock is great is great and beautiful.
My first batch of sauerkraut was crispy, and delicious. I love that it has a water seal. It's pretty large. If you want just a small batch to keep in the refrigerator you might go with a wide-mouth mason jar. But if you're going to can a larger batch, this is the way to go!
The inside rim is recessed on the inside where the lid sits. It is very hard to clean and rinse out because when you dump the water debris gets into this area. Other than that the fermenter works as it should!
