Do I need to season it?
No. The enamel coating is glass fused to the iron, so there is no seasoning ritual and no rust to watch for. Let it cool before washing and avoid metal utensils on the enamel.
What size loaf does it bake?

How do I bake sourdough in it?
Preheat the oven with the cloche inside, lid on, at 450–480°F for at least 30 minutes. Turn the loaf onto parchment, score it, lower it in, and bake 20 minutes with the lid on and 20–25 minutes with the lid off at about 430°F.
Why does the lid matter?
A home oven cannot make steam. The domed lid traps the moisture leaving the dough for the first part of the bake, which keeps the crust flexible while the loaf rises and gives you a crust that crackles instead of one that softens.

I make a lot of sourdough and usually do boules, however I decided to get this oval pan to try it out. The cloche is a little smaller than I had expected in height, but it works. I think this is good for a small loa. I love that it is cast iron, it has a nice weight to it. The quality seems very good. You can put parchment on the bottom or some rice to keep the bottom from burning. I like to preheat it in the over prior to putting the bread inside. All in all I find it to be a good value. I've been making artisan loaves for the past few years, primarily in my 12" deep cast-iron Dutch oven. I make loaves that are around 3 lbs. This is too much bread for me to eat personally, and the Dutch oven is quite heavy to be lifting in and out of the oven. When I saw this smaller bread oven I thought it might be perfect for a slightly smaller loaf. I was expecting an item that measured 11" x 7" and that would make a 2 lb loaf, as stated in the description. Well, this thing is significantly smaller than advertised. The length is barely over 10" to the outside (excluding handles) and 9-3/4" inside. Width is pretty close to 7" outside and around 6-3/8" inside. I made up a 1/2 batch of my bread dough which fit pretty well into this little thing. The finished loaf filled the pan comfortably and weighed 1 lb 3 oz cooked. I don't think there's any way you're fitting 2 pounds of dough. Measurements and size aside, this is a good quality set. The cast iron surfaces are plenty smooth for baking bread. The enamel looks great. And the knob on top is solid stainless steel. I would probably give this 4 or even 5 stars if the description were accurate because it really is a nice product. Just not the size I was expecting.

Please note the size before you order!This is a lovely quality enameled cast iron BREAD PAN. Measurements are 10 inches long by 6 ½ inches wide, by 5 inches tall. It IS very small for the price. But the quality is certainly high, and it bakes a beautiful loaf of bread. Like a large bread pan, only much heavier, with a domed lid. I live alone, so I do also use it as a dutch oven. The pan is shallow, two inches deep inside the base, the domed lid is three inches tall. It's small but very heavy, obviously well made cast iron. I have used it about six times so far, and it hasn't chipped. All of my 'cheap' enameled cast iron pieces chipped right away. Not this one, so I guess you get what you pay for. This unit is priced well at the low end of other similar ones.I was shocked when I saw how small it was, but it's actually perfect for cooking two servings in it, one for now, one for later. And that elusive loaf of bread, I wouldn't try to bake more than a generous one pound loaf.My larger dutch ovens of course hold enough for me for a week (have to freeze servings) which is nice too, but those big cast iron pieces are getting way too heavy for me to use. The unit arrived well packaged, secure and undamaged, and not in a wastefully large box. Opening the box, I had the immediate impression that the unit is very attractive, and well crafted. The unit is sturdy, weighs just under 10lbs.The exterior is coated in an enamel (or ceramic?), ivory white, and the interior is black cast iron that has either been polished or has received a coating that makes the surface very non-porous, ideal for non-stick properties. It’s very pretty, both the finish and its physical design. The shape of the lid reminds me of an old claw foot tub; the whole thing feels a little retro. The base has nice wide handles with decorative ridges for a secure grip. One could imagine serving the unit right to the table on holiday occasions, or any time. For performance, I tested baking a loaf of sourdough. The unit preheated without problems. There was no chipping of the enamel, nor any concerning fumes coming off the hot metal during its first use. I did have a little trouble though. The packaging advertises that the unit bakes a 2-3 pound loaf, and I measured my dough to about 2.5 pounds, but the loaf expanded into fully every inch of space inside. I’m glad I didn’t prepare 3lbs of dough. This left my loaf a little more dense than perhaps it would’ve been, had there been space for it to expand. Because the cavity was fully filled, the loaf did also cling a little to the lid, and I had to prod it loose with a wooden spatula. No big deal, but one has to be careful jousting with piping hot metal.One feature I wish would’ve been included is a care and handling guide. There were a few baked-on flecks on the ivory surface, and I wanted to scrub it back to clean, but I was a little unsure of how to properly treat the enamel.VERDICT : Overall, 5 stars, but with a care and cleaning pamphlet, it would be a 5+.[While this was sent to me for review, I take that job seriously. Getting people the wrong product is wasteful, irresponsible and a hassle for everyone. Not everything I review gets high marks]

The pot is also lighter to lift at 8.7 pounds (Split 4.71 Bot - 3.99 top). Our larger pots are > 10-12 pounds total.The two side handles are large and easy to hold. While the top knob stands tall so that you can grab it with a padded glove or standard potholder.I like the overall shape which encourages oblong loafs instead of round. This smaller, oblong shape is a nice change when making sandwiches, toast or just filling a breadbasket.The Cloche design (larger dome than bottom section) typically supplies a crispier crust.We're happy with this smaller Dutch oven It has a high-quality look to it and the enamel coating is smooth and even. One unusual aspect is the Black colored enamel used on the internal surfaces. This does make the pot darker inside but its' not so bad with the shallow bottom section used in the Cloche design and I don't think it's as pretty. On the positive side, scratches and even nicks and chips will be nearly invisible as the black coating nearly matches the color of the native cast iron.So, far the pot performs as expected. We've never used a pan with this shape so it's kind of cool to have different shaped slices in our breadbasket - a little variety.
