A one-gallon crock for the first batch that turns into a habit. The water channel around the rim seals the vessel with nothing but water — gas escapes, air never gets back in, and the ferment stays under brine where it belongs.
Glazed inside and out, so it takes on kimchi one month and sauerkraut the next without holding onto either. Two ceramic weights and a wood tamper are in the box.
Glazed ceramic. Wash by hand with warm soapy water and dry before storing. Keep the water channel topped up while fermenting. Avoid sudden temperature changes.

Wide water-lock rim
A channel of water around the mouth seals the crock without a clamp or an airlock. Carbon dioxide escapes as the ferment works; air never gets back in. Extra-wide, so it needs topping up far less often.
Two sizes
3 litres holds two to three cabbages — about five mason jars of sauerkraut. 7 litres takes five to seven, for roughly twelve. Both use the same seal and the same weights.
Half-moon ceramic weights
Two glazed weights sit on top of the vegetables and hold everything below the brine line. That is the whole trick: nothing above the brine, nothing to spoil.
Wooden tamper
For packing shredded cabbage down hard enough to drive out air pockets and draw the brine up over the top. Included with every crock.
Fired at 1280°C for extraordinary durability.
