What shape of loaf does it make?

A full-size rectangular sandwich loaf, the shape that fits a toaster and a lunchbox. It takes up to 2 lb of dough in a 10 by 5 inch interior.

Is it enameled?

Yes. The finish is enamel over cast iron, so it needs no seasoning and releases the loaf cleanly. Let it cool before washing.

How does the lid help?

Home ovens have no steam. With the lid on for the first part of the bake, the moisture leaving the dough stays around the loaf so the crust sets evenly. Take the lid off for the last stretch to brown it.

Can I bake sandwich bread without sourdough?

Yes. Any yeasted sandwich loaf, brioche or milk bread works. The heavy cast iron holds its heat when cold dough goes in, which is most of what a home oven struggles with.

Love this Dutch oven!Recipe:Levain:30g starter30g 11.5% bread flour30g whole wheat flour -set aside for 5 hours in a warm place.Autolyse:822g 11.5% bread flour64g whole wheat flour650g water- set aside for 2 hoursCombine levain and autolyse. Add 20g salt. Stretch and fold. Add water if it’s not too wet-I add only about 30g, some add 90-100.Stretch and fold every half hour.Put in proofing basket and cold ferment 12-36 hours. Shape and scour dough or add your designs.Preheat Dutch oven in 550°, take out and add dough, lower oven to 500° and bake covered 6 min. Lower to 450° and bake 20 min. Uncover for another 20-30 min.

Amazing Bread!

I'm not new to baking bread in a cast iron dutch oven. Unfortunately, my old one was really heavy and it wasn't coated in anything. So, use and maintenance was a real drag. I was super excited about this one because it's so much smaller and it has such a beautiful finish on it. Turns out it's a lot lighter, too.I did need to use an oval Baneton bowl in order to get the loaf in this container, but that's not an issue. I was also a little concerned about the lid handle holding up in the heat, but it was just fine and looked the same coming out.But the question that really matters at the end of the day is "How was the bread?" It was fantastic! Crispy outside, chewy inside, and a nice sour tang. You can see in my photo that the bread got a bit more well done than would be optimal, but that doesn't surprise me working with something new like this. In fact, I'm excited cuz I can take my cook time down a little bit when using this.Finally, clean up was a snap. The finish is terrific and wiped out easily. Very little maintenance required. I hope to use this for years to come.

I’m super impressed with this baking pan for bread. With our first attempt at making our own home made bread we tried a simple recipe for a loaf of French bread, and it came out perfect. So I’ll start off by saying I was highly disappointed that my cast iron enameled pan was soooo very chipped when it arrived. Pretty sad! Every corner! I should have returned it but it’s not like it’s not useable. Returning takes time I just don’t have right now. It just looks bad.The company should do a better job for what they charge. I’ve made bread and the pan is fine.

I'm very new to the world of cast iron, but was intrigued by the possibility that I could bake bread at home that would have a crusty outside and tender inside like a bakery. It's true! This bread oven absolutely delivers that, white, whole wheat or gluten free. My bread loaves didn't come out model pretty, but that's just a matter of recipe - I make a very simple bread, and with practice, I'll get better. They tasted great and is already half gone in my home.As with all cast iron, this bread oven (basically a long Dutch oven) has some weight to it, but not too bad. The enamel surface is beautiful, and the lid did keep the bread steaming in a way that just adding a pan of water inside the oven for steam doesn't. I was able to pull out the bread with no effort at all - I just followed the directions to preheat the bread oven first before adding the dough. That being said, since the oven is super hot when you are loading it, beyond a dusting of cornmeal on the bottom, I may try a sheet of parchment or a silicone bread sling to load the loaf so they come out looking nicer and more even.It cleans with a simple brushing off and rinse, dry and then add a coating of oil to keep the oven in good shape. With care, I believe this will last a long time - and works just as well as a certain super fancy enamel cast iron brand, so it's a better value if you're looking to experiment.Since it is a specialty item with one main purpose, I think it would make an excellent gift for super fans of bread making and/or cast iron and makes a lovely statement in any kitchen.

This was the perfect size and I can’t wait to try my rye. It’s a great quality. I’m going to try proofing in an oval basket and use a silicon bread sling next time.

I am loving my bread pan! Nice, heavy cast iron with a perfect, blemish-free enamel coating. I am happy that it is exactly the size it was listed as... 10x5 inches on the inside for a big loaf. The handles are a large enough size to grab without any fumbling when wearing oven mitts. This is so important and other companies don't think of it. The handles have a texture to them too, to help provide extra grip. The lid goes on easily and fits well too (amazingly on other loaf pans I've used, the lids require too much futzing around to get into place).Added next day: Yup- oiled the pan and baked another 975g loaf. Bread just slid right out. Beautiful crunchy crust!I baked a 975 g loaf in it for the test. I did not oil the pan because it says it is preseasoned. Well, as often is the case with preseasoning, the bread stuck pretty bad. But, I'll oil it up and try again. I don't normally trust preseasoning but I had to give it a try! It's easy to season cast iron though: let the pan get hot in the oven during preheat, oil it up and let the oil soak in. Then bake like usual. I really am happy with this pan and will be using it a lot for baking my weekly bread!
